BROTH offers contemporary Australian cuisine --- that is, British cuisine with Mediterranean and Asian influences that emphasizes fresh produce. Ceiling fans and a wood-framed glass door to the white-washed interior give this lofty bistro in Singapore's Chinatown district a charming and homey ambience at lunch and dinner. Great salads in Singapore are too few and far between, so it’s worth noting two on this menu: the baby spinach and portobello mushrooms with shallot and raspberry dressing, and the warm salad of smoked oysters with Spanish onions in a tangy citrus dressing. That said, we've been known to order the Idaho potato and crab cakes lathered in tarragon guacamole. For a main course, try the signature herb-crusted lamb loin with green beans and crunchy garlic potatoes, or the unusual braised deer shank in masala and Shiraz with celeriac, broccolini and almonds. BROTH’s wine menu is skewed towards new-world selections with an emphasis on Australian wines. Equally Australian and exceptionally sweet, the supernova Pavlova with fresh fruits and whipped cream makes a suitably Oz end to a meal.
