Chef-owner John Mim moved from a former converted deli to a refurbished house in the middle of the Main Line, upgrading both the menu and the ambience in the process. Mim’s cuisine can be inconsistent, but when he gets it right, as he does with his crab-filled gumbo shrimp etouffée with a side of jambalaya, you can almost hear the jazz on Bourbon Street. Not all of the menu items are N’Awlins-style; the ponzu-glazed salmon and crawfish spring rolls introduce Asian flavors to the plate. Bring some Abita beer, a hearty Shiraz or a Sauvignon Blanc to stand up to Carmine’s assertive flavors.
