Afghan cuisine combines the flavors of Turkey, Greece and India and adds its own spices. The results, as you’ll learn from dining at Kabul, are interesting. Consider an appetizer such as pakawra e badenjan, chunks of eggplant dipped in a light batter, then sautéed to crispness and garnished with the contrasting tastes of yogurt and meat sauce. The lamb and chicken entrées are reminiscent of Indian-style tandoori cookery: tender meat seared on the outside, moist and delicate within.
