Fresh is the word for the seafood that comes out of this upscale Boston-based chain. Its menu, designed by the celebrated chef Jasper White, is a paean to regional American tastes. Plates of mid-Atlantic oysters and clams bring beautifully briny bites to the table. Fried clams and thick clam chowder do New England proud. The lobster roll is an edible tribute to the state of Maine. Catfish with bay shrimp and andouille sausage smack of New Orleans, and shellfish-rich cioppino of San Francisco. Once in awhile a dish turns unhappily corporate: planks of tuna, salmon and Arctic char in the grilled filet trio, for example, are fresh, but cut too thin to retain their character after cooking. But all in all, Legal Sea Foods lives up to its slogan, If it isn't fresh, it isn't Legal!
