During the day, tapas-style dining is de-emphasized due to Mosaic’s popularity with the business crowd. In the evening, rules about snitching from someone else’s plate are more relaxed. During your tapas-style feast, plan on butter-poached lobster tail with bacon-truffle emulsion; limoncello mussels, compressed watermelon and goat cheese; or cherry-port braised short ribs. Claus Schmitz, chef and founder of the local chain, clearly knows how far to push the fusion. End the meal with salt caramel panna cotta. Mosaic has become a popular perch from which to watch the nightclub-hopping scene drift by --- or drift in, thanks to the adjacent lounge. A dozen or so selected items from the dinner menu are available in the lounge until 2 a.m. on weekends.
