Some hotel restaurants coast, assured of a captive audience. Not Prime 108. This place values the local landscape’s bounty over creating a homogenized experience, feeding travelers and locals inside Nashville’s Union Station Hotel, which has stood for more than 100 years. Artisanal touches such as organic greens, fine cheeses and carefully sourced meats craft a delightful, if expensive, dining experience three meals a day. You’ll find tried-and-true dishes plated with classic style, served in a striking setting amid soaring ceilings and lavish stonework. Try the bourbon-smoked filet with caramelized sweet potatoes or the rich, velvety lobster ravioli. Vegetarians will find plenty of side dishes from which to compose a plate, and there’s also a daily meatless chef’s special. The dessert menu rotates according to the whim of the pastry chef. The wine list focuses on Californian selections with a few from other regions, and some 20 are available by the glass. Note: Saturday and Sunday brunch starts early, 6:30 a.m., and runs to 1 p.m.
