THIS RESTAURANT IS CLOSED Republic Pan-Asian Restaurant & Lounge Restaurant Review:

From its chic minimalist design---think CB2 but hipper---to its flavorful pan-Asian cuisine to the friendly yet knowledgeable service, Republic makes a strong impression. No big surprise here since executive chef Evan Packer has done stints at both Narcisse and Hugo’s Frog Bar, while the owners have earned a following at their other restaurants, Rise and Shine. The bi-level eatery---there’s a lounge downstairs and a saké lounge adjacent to the upstairs dining room---features a well-edited menu with dishes from Japan, China and Thailand. The Chilean sea bass appetizer with a miso-soy glaze shows off the chef’s Japanese culinary skills, as do the creative sushi rolls (the Tochigi Roll with spicy tuna, mango and avocado is a standout). The Mongolian stir-fry with scallions, carrots and bamboo shoots and a choice of beef, chicken, shrimp or tofu, is ample enough to share, but next time we’ll ask for a bit more heat. The wallet-friendly prices could make Republic a neighborhood joint, while the interesting saké list and cool atmosphere paired with soft lighting and subtle music make it feel like a special occasion place, too.
