After the fall of Saigon where their father and grandfather ran successful restaurants, Lim Chee Ming and Tu Duyen Anh moved to Las Vegas via San Francisco. The beef noodle soup, cooked for half a day, is the favorite of Vietnamese expatriates, many who come to Las Vegas for the weekend to dine at Saigon. We like the sautéed shrimp with fish sauce and the Vietnamese beef fondue. Che dau xanh nuoc dua, a sweet yellow bean with coconut juice, is not only delicious but also soothes the fires created by the hot sauces.
