Ted Turner (of CNN fame) and LongHorn Steakhouse’s George McKerrow Jr. teamed up to craft a chain of restaurants that gives diners the option of beef or bison for burgers and steaks. Nineteenth-century-style design features create a warm atmosphere: pressed tin ceilings, period pendant lighting, ceiling fans, silver print photos and in some locations copies of artworks in Turner's private collection of Western landscapes. Turner, the largest landowner in Montana, has formed a consortium of bison ranchers to maintain a steady supply. We like the bison short ribs, offered exclusively for dinner on Saturdays. Bison pot roast is a good stand-in, however, with juicy, tender meat, mashed spuds, green beans and gravy. In a snack mood? Go for the bison sliders. For lighter fare, opt for the chopped salad. The wine list is mundane, but the cocktails supply plenty of interest, and among several refreshing concoctions is a salt-rimmed Grand Agave with Patron tequila and agave nectar.
