A journey into the soulfulness of bistro cooking is how Trio Atelier likes to describe itself. Swell. Despite a bistro dish here and there, we see it as contemporary American. Owner Henry Adaniya has seen a lot of chefs come and go (on to their own hot places), starting with Gale Gand and Rick Tramonto, Shawn McClain (Spring, Green Zebra) and Grant Achatz. Dale Levitski is the top toque now (with stellar support from pastry chef Mary McMahon).The big change here is that the very expensive and haute restaurant known as Trio has gone casual in atmosphere. The menu is a series of small plates, medium plates and large plates (entrées). The highest price dish on the menu is the flatiron steak priced at $21 (that was the cost of an appetizer at the old Trio). Even better is the fact that the quality is high and the service is in tune with the kitchen. Excellent wine list too.
