The Philadelphia-based “Iron Chef” Jose Garces (Distrito, El Jefe, Garces Trading Company, etc.) is behind Volvér, a high-end restaurant located in the Kimmel Center for the Performing Arts. Garces’ team creates elaborate tasting menus with either eight courses ($75-$120 per person) or a dozen courses ($175-$250 per person). A given night might bring a modern spin on sushi with Carolina gold rice, lamb tartare with pickled blueberries and a frozen buttermilk vinaigrette and a parsnip “brûlée” cake with hazelnut cream.
