Restaurant 1833 is housed in a historic Monterey building that was once the office of "Dr." James Stokes --- who, according to legend, faked his MD credentials. But there's nothing fake about the food and flavors, or the warm and attentive service. There are several intimate rooms ready to set the mood for a special meal. Gallatin's Room features a fireplace and vintage chandelier, while the black leather booths on the Founders' Balcony overlook the bustling bar area. Former chef Jason Franey has left the restaurant and Mikey Adams, who had served as his executive sous chef, has taken the helm. The seasonal menu is expected to evolve shortly. Offerings have included briny raw oysters under a sweet-and-sour white balsamic granita. Kuri squash soup continued the theme of contrasting textures and flavors, with bites of apple and ginger suspended in a velvety purée. Octopus from the wood-fired oven was fork-tender, and the charred ricotta took the beet salad to a new level. The "No Whey" cocktail, composed with whey from the ricotta, was a spectacular complement that went down way too easily. We couldn't stop eating the juicy 48-hour glazed short ribs, and the accompanying ham hock broth was good enough to drink. The finishing touch --- strawberry trifle with a meringue top flamed tableside --- was a memorable end.
