Ametsa with Arzak Instruction, found in the luxurious hotel The Halkin by COMO in Belgravia, is a team effort from chef Elena Arzak and her father Juan Mari Arzak, along with Mikel Sorazu, Igor Zalakain and Xabier Gutierrez. With an interior taking inspiration from the original Arzak restaurant in San Sebastian, the ceiling boasts a striking 7,000 spice-filled glass tubes. The menu showcases the cuisine and techniques from the Basque region in Spain, with contemporary flourishes. The seasonal tasting menus are a treat. From the à la carte, expect inventive combinations like langoustine with lichens, tuna with cinnamon, and pigeon with seeds. Moving to the sweets, prepare to enjoy orange french toast with spinach, or clove custard with toasted milk and pineapple ice cream.
