Joël Robuchon imbued his star pupil, Philippe Groult, with a passion for perfection. Superb ingredients, which Groult chooses with discriminating care, are the basis of colorful, flavorful dishes that delight both eye and palate. To wit: a scarlet spider crab stuffed with a blend of its own meat, tourteau crab, and lobster; pearly white John Dory topped with slow-roasted tomatoes and glossy black olives; or golden sweetbreads with dried fruits and nuts and a brilliant green snow-pea fondue. This is cheese-lovers heaven, with the cheese coming from one of the most noted cheese affineurs in France. Only the best growers are admitted to the select and expensive wine list.
