: Anima, from the EDO Hospitality Group, is located in The Gramercy in southwest Las Vegas. The décor features hues of chocolate, burgundy and pewter; a charcuterie and raw bar; an open kitchen; and murals of marine life decorating the walls. EDO chef/partner Oscar Amador and longtime Las Vegas chef Francesco Di Caudo, are collaborating to include each chef’s experiences from Spain, Italy and beyond. The menu includes Peruvian scallops crudo with persimmon salpicon; Catalan suquet—traditional Catalan stew with clams, tomato broth and nut picada; pappardelle cinghiale with wild boar ragu; and arroz a la cazuela with duck confit, foie gras and black trumpet mushrooms. Each dish is served to share at the table, and in addition to the a la carte options are seasonal chefs and vegan tasting menus. |
