Apropoe’s Restaurant Review:
After a five million dollar renovation, the former Grille 700 at the Marriott Waterfront became Apropoe’s --- a play on the name of Baltimore’s favorite literary son. The reimagined space is sleek and open-plan, encompassing the dining room, a bar and a lounge offering widescreen TVs, free WiFi, and a small-plates menu. Apropoe’s obviously sees itself as a downtown player, not just a meal service for hotel guests. Executive chef Carlos Gomez’s on-trend menu of seasonal Maryland comfort food sources most ingredients locally, some from as close as the hotel’s rooftop garden. (The garden’s herbs also add their flavors to a selection of artisanal cocktails.) Signature choices include a roasted beets and burrata appetizer with hazelnuts and balsamic reduction; sous vide short ribs; and Maryland crab cakes with corn relish, wilted spinach and tarragon aïoli. Twelve taps offer local beers. The private party space can seat up to 40 guests.
