AQUA Restaurant Review

: At AQUA in The Ritz-Carlton, Wolfsburg, longtime chef Sven Elverfeld draws inspiration from regional German specialties as well as global ingredients and cuisines. The prix-fixe meal starts off with elaborate “Snacks” before continuing with dishes like foie gras and blood sausage Gröstel with Granny Smith, shallots, celery root and pecans; and rack of venison from the Altmark region with pointed cabbage, kohlrabi, currants and spätzle. Diners choose either the “Visions” menu (four, five, six or seven courses, 145 €-185 €) or “Impressions” menu (six, eight or nine courses, 170 €- 215 €), which can be accompanied by a “wine journey” guided by sommelier Marcel Runge.
