Beautiful dark woods, crystal chandelier light fixtures and a color palette featuring chartreuse, cream and charcoal gray with metallic accents of brushed brass and bronze set the mood for a first-class dining experience featuring Prime, aged, corn-fed beef. For starters, we like the lobster bisque loaded with chunks of the luscious crustacean, thick-cut Nueske’s bacon au poivre with bourbon molasses glaze and the classic Caesar salad. Stone crab claws are available in season. Though you can order main courses ranging from salmon or pan-seared Chilean sea bass to pan-roasted natural chicken or Colorado lamb, steak is king. Options include Japanese A5 and Australian Wagyu, eight- and 12-ounce filet mignons, 16-ounce strips and rib-eyes, and a 24-ounce porterhouse. Toppings and sauces are noteworthy, with options of foie gras, Tabasco bone marrow, truffle butter and bourbon peppercorn. À la carte accompaniments include potatoes au gratin with aged cheddar, lobster mac ‘n’ cheese, and creamy spinach with bacon. The notable wine list has 1,300 labels hailing from every major wine region. Selections are housed in an expansive wine cellar. Among desserts are butter cake with butter pecan ice cream, strawberry cheesecake with a pecan crust, and six-layer lemon cake with lemon glaze.
