THE RENOWNED SEEGER’S, A GAYOT TOP 40 RESTAURANT IN THE U.S. IN 2006, HAS CLOSED German-born Guenter Seeger is a culinary icon whose cooking is as meticulous, rhythmic and methodical as a Brandenburg Concerto. It also can seem hermetic if you are not among the cognoscenti. Seeger wants to strip his preparations of everything secondary to the essence of the product so as not to confuse the palate. He doesn't want diners distracted by the surroundings. His renovation of the nearly decade-old restaurant emphasizes this perspective. Velvet drapes shield diners from the arrival and departure of other guests. To the right of the entrance is a bar area where patrons may gather before being seated and enjoy a drink and a nibble. The number of seats was halved for greater guest intimacy and comfort. This is no ordinary restaurant. You are here to savor the rare flavor of a tomato gelée with a white tomato mousse; the complex texture of a flan with fresh truffles; the delicacy of a halibut pavé with squash flower tempura and tomato-rosemary ragoût; the surprise of a kiwi marinated in lavender. Seeger's highly researched wine list is superb, with more than 1,000 selections, many of them very reasonably priced. The prix-fixe menu is four courses that change daily, and there is also an eight-course tasting menu. Vegetarians note: This chef is so capable with the preparation of vegetables that a multi-course vegetarian meal (even if it's vegan) will take you to the zenith.
