Sushi Kashiba Restaurant Review:


While a Belltown restaurant still bears his first name, chef Shiro Kashiba is now at home in a space where the scenery and location are as iconic as his sushi expertise. A large window opens the dining room to views of Pike Place Market, and beyond that, the span of Elliott Bay. The environs exude a simple, elegant esthetic, and even the ceramic serving-ware showcase the food. Some might argue the best sightline keeps your back to the window, as when seated at the sushi bar, where Kashiba and his hand-picked slate of sushi masters prepare and hand over immaculately cut fish across the light-wood counter. Most diners let the chefs choose their dishes by selecting the omakase menu, although there are also smaller sushi dinner options, as well as à la carte choices. From the fatty toro and briny oysters, to rich miso soup with clams and a flourishing "egg finale," this sushi is far above anything else served in Seattle. The wine list is focused mainly on saké, and servers are well-equipped to pair a meal with the appropriate flavors. A full bar, cocktail list and traditional wine list are also available.
