![]() : Chef/owner Bryce Gilmore continues to keep Austin in the national culinary spotlight with Barley Swine. The seasonal tasting menu, nine courses for $95, is crafted with locally sourced products and comprised of small plates. À la carte offerings might range from kimchi octopus with fried potato and seaweed mayo to fried duck leg with Carolina Gold rice, broccoli and pickled golden beet. For dessert, you might encounter Bourbon budino with strawberry, honeycomb and chamomile. As the name suggests, Barley Swine takes its beer seriously. Servers pair beers with dishes in the same manner one expects from a sommelier. However, fret not if you prefer grapes to grains, as the wine list has a number of notable selections. Cocktails, including a barrel-aged negroni, are also available. |
