Barley Swine Restaurant Review

: Chef/owner Bryce Gilmore continues to catapult Austin into the national culinary spotlight with Barley Swine. The seasonal menu is crafted with locally sourced products and comprised of small plates, but calling these "tapas" is like calling Van Gogh a doodler. Courses are seamlessly timed by the attentive staff. Highlights have featured rabbit wrapped in house-smoked bacon with pickled carrot-and-beer creamed spinach, and sweetbreads, delicately tender with an ever-so-slightly crisp finish. And while offerings change on a whim, rest assured that Gilmore's newest creations will uncover surprising territory. As the name suggests, Barley Swine takes its beer seriously. Servers pair beers with dishes in the same manner one expects from a sommelier. However, fret not if you prefer grapes to grains, as the wine list has a number of notable selections.
