The plush ambience and dramatic, close-up views of the Mississippi River please the visual senses almost enough to excuse the kitchen's inconsistencies and the often-fumbling table service. Global techniques frequently meet local products on the plates here, and the encounter can be as unfortunate as often as fortuitous. The rémoulade sauce served with plump, meaty crab cakes benefits from a zap of ancho chile. Lobster bisque with fresh corn is scrumptious, and the kitchen's version of bouillabaisse is a heartwarming dish. Red meats and fowl, though, suffer too often from intense smoking or heavy sauces, and a mango-habanero jelly is in the wrong company alongside shrimp stuffed with crab meat.
