The whole idea of this glamorous nightspot, which also has locations in Walnut Creek and San Diego, might have been dreamed up for this locale. After all, Crosby was a popular desert figure both on the golf courses and in Palm Springs nightclubs, and the sleek '30s and '40s nostalgia fits well with the mid-century Modernist design style the Palm Springs area has claimed as its own. The owners describe the food as “California country club,” but it is the better sort of country club, safe but not stuffy. The braised short rib with black truffle and cauliflower purée with blue cheese crostini makes a more than satisfying appetizer. The crab and shrimp stuffed Loch Duart salmon with cranberry bean and vegetable succotash does justice to the best of sustainable fish. For dessert, a chocolate soufflé is accompanied by warm ganache served tableside, a tarte Tatin supplies a classic note, or a maple cinnamon panna cotta with walnut nougatine and cinnamon caramel soothes and stimulates the palate. The wine list leans heavily on California vintners, and offers some impressive choices, from Kosta Browne and Bonaccorsi Pinot Noirs to Quintessa, Opus One and Rubicon Meritage bottles.
