The cooking at this Waikiki restaurant reveres great French culinary traditions and there’s a strict adherence to classic French service; these elements are the real thing and not a pale homage to some antiquated ideal. The menu, while replete with classics, is neither hidebound nor boring. Dishes range from the traditional: escargot swimming in butter and garlic or tender veal and delicate sweetbreads with mushroom cream; to the innovative: scallops encased in crispy potato swirls with a citrus beurre blanc or Berkshire pork chops with apple and foie gras stuffing served with butternut squash gnocchi. Here, your server does not want to be your new best friend and you will not be seated closer to strangers than your dining companions. Rather you will be sheltered in a lovely world of highly polished dark wood, leather banquettes and fine art. The wine list leans heavily to French selections and features many by-the-glass choices which encourage diners to try something new. Best of all, this is the only fine dining place open throughout the afternoon and late into the evening. Pop in for a late afternoon bowl of French onion soup or a late night snack of steak tartare.
