Chef Avner Samuel, one of the most respected creative forces in the kitchens of Dallas, and known for his propensity to move from restaurant to restaurant, has manned the kitchen at Bistro A ever since its opening more than a year ago. And man it, he does---he’s always in the exhibition kitchen, working harder than anyone else. He’s not a celebrity chef; he’d rather spend his time cooking than greeting regular customers, and his efforts show. Avner, who used to cook at The Mansion before current chef Dean Fearing, offers an excellent tortilla soup, rich with chicken, avocado, cheese and fried tortilla strips, but our favorite appetizer is the Mediterranean mezze plate---assorted Mediterranean appetizers, and we especially like the baba ghanouj (eggplant dip). A simple yet satisfying appetizer is the pita bread with arugula, olives, goat cheese and melon. You are always wise to let the chef select your meal himself, and he’ll give you the very best he has to offer that day.
