![]() : Meat --- and lots of it --- is the star at this up-tempo homage to whole animal butchery that goes beyond predictable primal cuts. Against a backdrop of rustic woods, weathered plank floors, an antique bar, cozy banquettes and farm tools on the walls, chef Tyson Holzheimer turns out house-made sausages and charcuterie, steak frites and beef cheeks, Wagyu meatloaf and dry-aged sirloin. A walk-up butcher counter flashes raw cuts of beef and pork, which the kitchen will cook to order or wrap up for home consumption. While the short wine list is nothing to write home about, the cocktail scroll (we're enamored of the Old Man Saz with rye whiskey, vermouth, chartreuse, citrus and bitters) and beer roster are compelling and robust. A rotating menu of desserts might involve a berry crumble with ice cream or cheesecake. |
