Hyatt pioneered the open kitchen concept in Asia, and at Cafe they use this culinary entertainment effectively with a global array of live cooking stations. Breakfast includes the expected fluffy croissants, just-baked breads, crunchy homemade granola and made-to-order pancakes with Canadian maple syrup. There are also Asian flavors like Japanese grilled fish, and Chinese fried donuts, noodles and congee. At lunch and dinnertime the cavernous space comes alive with chefs slicing fish for sushi, manning the teppanyaki grill, stirring curries and tending to the tandoor ovens, and preparing a full array of Western comfort foods like pizza and pasta along with seafood on ice and grilled meats.
