After politics and politicians, the next meatiest subject in Chicago is barbecued ribs. There is no dearth of good rib places in Chicago, but few are more well-known than Carson's. The interior of its flagship location on Wells Street will win no decorating awards---heavy furniture, plasticized booths, dark colors---but the consistently good, meaty baby-back ribs are a class act. The barbecue sauce, which locks onto those slabs, gives the ribs a look of molten steel and a taste that is slightly fiery but most pleasing. Crunchy coleslaw and au gratin potatoes are the perfect accompaniments to the ribs.
