THIS RESTAURANT IS CLOSED Chimayo Restaurant Review:
Transforming a suburban mall space into a bit of the American Southwest isnt easy, but partners Nancy Johnson, her brother Rob and Tracy Roberson have pulled it off. Keith Kilbys abstract landscape mural sets the tone for food that features Native American ingredients. Perfectly cooked shrimp perch atop a blue corn pancake, and while the chipotle chile cream sauce could use a little more pepper, it is very tasty nonetheless. The restaurant smokes its own salmon, fish of the day, chicken wings and turkey for salads and enchiladas. A pair of steak burritos combine roasted beef with red salsa and melted jack cheese within two flour tortillas. Desserts vary and only two are offered daily; hope that one is the blueberry cobbler, not a true cobbler of fruit baked under a crust but blueberry filling sandwiched between slices of cake. The wine list is a starter effort that needs work, but the generous list of sipping tequilas compensates somewhat.
