THIS RESTAURANT HAS CHANGED LOCATIONS Chimayo Restaurant Review:

Chef-restaurateur David Wilhelm describes this Latin-inspired cuisine concept as simplistic, but we beg to differ. It's an intriguing mixture of flavors from Mexico and its neighbors to the north and south. Wilhelm offers several variations on Caesar salad. We recommend ordering it with rare ahi---but be forewarned, it's more filling than you think. Braised pork adobo, spice-encrusted sea bass, and prosciutto-wrapped scallops are all intriguing entrées. However, the simpler Mexican-inspired specialties such as chile rellenos and three-cheese enchiladas are standbys. For drinks, stick with cocktails. Between the infused vodka martinis and the specialty margaritas, cocktailers can stay happily in their cups for hours.
