Installed in the former residence of the papal chamberlain, Christian Étienne enjoys what may be the best location in Avignon, facing the Palais des Papes, with a panorama of the eponymous place. Étienne is often on hand to greet his guests. The Provençal dining room is elegant, with its terrace and its distinguished reception. The menu emphasizes seasonal offerings. Try the scallops with smoked bacon spinach lasagne croustillant, the mullet served on an endive fondue with jus vert, or the pigeon with a Jerusalem artichoke julienne. For wine, stick with a Rhône du Sud, one of the main strengths of the cellar, from Beaucastel to Bonneau.
