The name refers the cino cactus, a tall variety that can grow to more than 60 feet on little water. Pepper-jack-cheese corn fritters with margarita jam and garlic aïoli help restore nerves frazzled by a day of shopping. The ravioli New Mexico combines black beans, chicken, corn, peppers and onions in tender pasta pillows and elevates them with a red pepper cream sauce. Vegetarians can savor salads or a vegetable plate assembled from a myriad of tasty side dishes. The extensive wine list offers more than 20 choices by the glass. More important, it includes wines---Viognier, Zinfandel and Syrah---that marry well with this food. The most popular desserts are a hazelnut crème brûlée and an enchilada stuffed with apples and walnuts.
