Covino's owners, who hail from Upstate New York, have brought New York-style thin-crust pizza to Plano---the kind of pie that sports crusty bubbles, is lightly sauced, and comes topped with whole mozzarella, not that tasteless part-skim stuff. You’ll need to bring your own wine, but you’ll be glad you did once you sink into one of the hearty pastas, which cry out for a sturdy red. The meatball subs, served on a toasted baguette and topped with cheese and chunky tomato sauce, are unbeatable, as are the calzones. You’re likely to see a local soccer team chowing down here, as well as owner Joe Covino or his wife, Michele, who makes the super cheesecakes that are served. You may have a hard time finding this casual little spot, buried deep in a series of strip malls, but you’ll be well rewarded for your effort.
