Innovative, contemporary interpretations of ageless classics highlight the menu of this convivial bistro. Opened by celebrated chef Daniel Boulud for the 2010 Vancouver Olympics, db bistro moderne features not only his modern bistro dishes, such as his $29 db sirloin and short ribs burger, but new takes on French classics as well. The moderately priced "Frenchie" burger, served with grilled pork belly rillons and Roquefort, is one prime example. Adding to these favorites, executive chef Nathan Guggenheimer, who manages day-to-day restaurant operations, has crafted a menu featuring West Coast-inspired dishes such as Arctic char with clams, Toulouse sausage and oyster mushrooms. Roasted black cod with a brandade, herb and bacon crust, potatoes paysanne, razor clams and cockles is another hit on the list of approachable fare.
