It’s possible that the clientele of the Dierdorf & Hart’s won’t remember much about the two NFL stars’ football days. Here’s a quick primer: Dan Dierdorf was an offensive tackle who’s now in the Hall of Fame; Jim Hart was a smart quarterback. After the Cardinals departed for warmer climes, they were among the retirees who remained. Their high-quality steakhouse has long been one of the more upscale entries in the entertainment zone that is West Port Plaza. The classic steak menu remains, but it’s supplemented by a second, more affordable, list of expanded offerings. By remodeling the bar and other dining areas, the owners are giving themselves the flexibility to have both upscale and more casual diners simultaneously. Those who looked forward to prime rib on the weekend can rest easy---you can’t expect two NFL greats to totally give up their steaks.
