THIS ESTABLISHMENT IS CLOSED Chef Dominique Macquet hails from Mauritius, an island in the Indian Ocean, and he has always incorporated a good share of exotic fruits, seafood and spices into his cooking. The menu at his French Quarter restaurant reflects this heritage and adds unmistakable Creole influences. One of the chef's specialties, coming from the Turks and Caicos islands, is conch, which he prepares as baby conch ceviche and, as an entrée, sautéed and served over risotto studded with plump local andouille sausage. Fire-roasted Louisiana shrimp are enlivened with green mango chutney, and Macquet also puts his own stamp on Maine lobster, Moulard duck and lamb, which is served as a three-piece "study" with a grilled chop, a confit and a merguez sausage. Trophy bottles fill out an extensive wine list, leaving budget-conscious diners few options and high rollers a sipable playground.
