THIS ESTABLISHMENT IS CLOSED Once the chef of Signatures restaurant in DC, Morou Ouattara now has his own place in Alexandria in the location of a former seafood restaurant---and he’s at it again, creating fantasy dishes with artistry. At the same time, his cuisine is a beguiling mix of American classics infused with both French and African flavors and techniques---and the finished product is so pretty you won’t want to touch it with a fork. Start with the diver scallops with bacon powder and melon seed milk, an exotic beginning to any meal. But you might also enjoy the escolar with wasabi pearls and pickled watermelon rind, or plantain fritters with refried coconut and peanut butter powder. Entrées, of course, are equally unusual: the pan-roasted chicken breast with a curry banana crust seems rather straightforward when compared with the domestic pork loin, pork belly, and chocolate Merlot. If you are just looking for something quick and easy, then save Ouattara’s dining experience for a night when your palate demands something outrageous. Half of the fun of eating here is figuring out what things are.
