![]() Galaxy Taco Restaurant Review: After double-digit years of successfully helming George’s at the Cove in La Jolla, Trey Foshee launched another eatery with partner George Hauer (the George in George’s at the Cove). Here, Foshee and his chef de cuisine Christine Rivera put their creative touch on Mexican street fare, taking the taco to new heights. Organic, heirloom corn tortillas, ground and made in-house daily, cradle a variety of meats, seafood and vegetables, with inventive sauces and salsas. Not in the mood for tacos? There’s wood-grilled trout, chili-braised beef short rib and tender adobo grilled chicken. Freshly made churros with Mexican chocolate dipping sauce are a sweet finish. The bar serves specialty agave spirits, nicely curated wines and local craft beers, and the dog-friendly patio calls for post-surf margaritas. Mimosas or micheladas are great companions to chilaquiles and huevos rancheros at Sunday brunch. Colorful murals and hand-painted tables lend artistic flair. |
