Hot pots are a staple in most Asian cuisines, and shabu shabu is the Japanese version. Reminiscent of fondue, it presents boiling meat broth set over a burner in the center of the table, and patrons cook individual servings of thinly sliced meats and vegetables, egg and noodles in the broth. Of course, you don't want to let any of the liquid goodness get away at the end of the meal as you've made a good soup, so do savor it. There's vegetable stock and a veggie platter available, too, and vegans are easily accommodated. A sauce bar allows for assembling a concoction to your liking, or ask your waiter to do the job for you (you may beckon him by reaching up to an electrical summons that hangs onto the door jamb of the private dining space you occupy). Healthy and light in fat and calories, the food is quite satisfying. Enjoy a hot tea or a cold saké with the fare.
