Headquartered in Nashville, Tenn., Holler & Dash specializes in biscuits with a variety of accompaniments. The bright, cheery environment, warmed by lots of natural light, is enhanced by a team that just can't seem to quit smiling. Biscuits by themselves are quite good, and we think we'd like one with a dab of sorghum some time. But the combinations get too fancy in pursuit of creativity, and some just don't work. The country ham and the vinaigrette-dressed kale on a biscuit taste great individually; however, the red-eye aïoli beneath the ham winds up making the biscuit gummy and unpleasant. A better dish is the andouille-topped cheese-covered biscuit with a sausage cream gravy, although the gravy's temperature borders on tepid. Cold pimento cheese offers Southern flavors, but sitting atop the crispy fried chicken, the hot-cold contrast seems disconnected. Sticking with the simple classics may be the best bet: a sausage egg biscuit; a bacon egg cheese biscuit; a country ham biscuit. Coffee from Revelator hits the spot.
