Ibiza's kitchen puts traditional Spanish cookery within a contemporary technical framework. While the tasting menu offered Monday through Thursday evenings serves as a fine introduction, we prefer to delve deeper into complex, full-flavored entrées like roast chicken that gets mileage from aged sherry vinegar and walnuts as well as potatoes baked with bacon, shiitakes and blue cheese, or almost-classic solomillo (the use of oyster mushrooms adds intrigue to the tenderloin broiled with garlic in a red-wine sauce). And the dessert menu features more than just flan---so much more. We're partial to white chocolate mousse infused with orange liqueur and topped with passionfruit ice cream. Hospitality is high on Ibiza's to-do list as well.
