Chef Sylvain Sendra and his wife own this gastronomic spot in the Latin Quarter. Meticulous attention is given to all kinds of details, whether it is the mini baguette served with butter, the sophisticated amuse-bouche (i.e. cauliflower moss and shavings with vanilla oil) or the little-known yet valuable wine served by the glass, a 2012 Saint-Pourçain Les Ardelles. The four-course lunch menu offers great value for the money. Original preparations showcase rare ingredients and astutely mixed flavors. Egg comes with white asparagus, taggiasche olives and pork ventreche; cod with celeriac rémoulade and shellfish broth; and the rack of lamb with mizuna lettuce, kabu turnips and purée. The strawberry tart with Chantilly cream and frozen mint is a sure bet, thanks to its freshness. To match the meal, you can count on the sommelier to recommend fine items from the well-stocked cellar.
