Located in the Borgata Hotel Casino & Spa, just off the casino floor, Michael Schulson's Japanese tavern features sushi, saké and robatayaki --- Japanese-style barbecue --- offered in modern environs. Signature dishes include the edamame dumpling with sweet saké and shallots and the spicy tuna cracker with scallion, jalapeño and nori. Crispy pork shank, a generous entrée, is served with Asian pear and crystallized ginger. If you think you don’t like tofu, try the tofu donuts made with puckery yuzu and adzuki jam and paired with an iced espresso float. Izakaya's lounge and bar presents tempting cocktails and sharable plates for after-hours noshes and drinks, or a late-night meal.
