The word “kaiseki” refers to high-end Japanese cuisine. The term also designates the traditional Japanese banquet that Hisayuki Takeuchi tends to modernize here. Enjoy a gastronomic experience in this spare environment with only three large tables, or sample pastries such as green tea madeleines in the tea room. When diners order the omakase menu, the chef has carte blanche to innovate with fresh and meticulously carved products like sea bream, duck, chicken and vegetables, along with maki, sushi and sashimi.
