Kaspar is definitely not a ghost at this outstanding Seattle establishment. He's alive and well in the form of owner Kaspar Donier, who owns the gracious hot spot with his wife, Nancy. The best way to enjoy chef Donier's talents is at your leisure in the dining room or, better yet, in the thick of the action in the kitchen at the chef's table. The Swiss-trained Donier deftly blends east and west with an always-evolving seasonal menu. Seafood predominates. We recommend scallops bedded on spinach under a coverlet of creamy vinaigrette laced with bacon and thyme or the simple splendor of a trio of seasonal fish, which may sizzle with the subtle heat of Thai curry and coconut basmati rice. Donier is equally adept at long-simmered dishes like the sublime lamb shank braised in Merlot. Virtually everything is made on the premises, from the crackling lavash to sausage and smoked meats. The fancy dessert sampler makes a satisfying finish, perfect for sharing. Northwest wines form the backbone of an extensive list compiled by Donier's brother, Markus. Order by the bottle, the glass or in two-ounce samplers in the wine bar.
