Chef-owner Scott Carsberg works his culinary magic five evenings a week at this elegant Belltown restaurant, and remains one of Seattle's least known but most well-respected chefs. Inside his restaurant, the muted, minimalist décor reflects Carsberg’s simple but refined style of cooking. Born in Seattle but trained in Europe, he cooks with contemporary flair derived from classic techniques. Portions are thoughtfully small, but feature rich ingredients such as foie gras or braised oxtail. The jewel-like presentation of each dish is dazzling but never precious. Our advice: order the tasting menu. A few examples of Carsberg’s wizardry include ravioli aperta---a mound of imported sheep's milk ricotta enclosed with thin sheets of pasta, and topped with a quivering egg yolk that when pierced seeps seductively into the pungent puddle of black truffle-flecked consommé beneath. Or select sliced smoked salmon atop a warm waffle drizzled with horseradish cream and topped with capers and a trio of Olympia oysters. There's also a selection of ripe cheeses. When it comes to dessert, order anything with chocolate mousse. To complement the daily-changing menu, Carsberg has compiled a brief but thoughtful wine list with selections from Europe, California and the Northwest. Service is professional and friendly.
