In Hong Kong, Maria's Bakery & Café is a local chain, but in its U.S. setting it is not your typical café or bakery. Here, it's all about shelves full of Chinese-style pastries, tarts and elaborate wedding cakes, all frills and whipped cream. As an adjunct is the café, where one may dig into bowls of congee and such Americanized dishes as ham broth and spam meat with egg macaroni. In other words, this is not your typical Chinese restaurant. Sure, you can pick out some Hong Kong-style deals---wonton and noodle soup, and beef brisket soup---but you'll be amazed at the number of East-West offerings that would do a fusion café proud.
