Though not a native of Lyon, young Mathieu Viannay is an asset to the new Lyonnais generation, serving tradition with a personal approach: on the pâté-en-croûte with foie gras, he adds a touch of slightly acid butterscotch. Pine nuts bring some crispness to an abalone slowly stewed in a thickened white sauce. Notable are the calf’s sweetbreads and lobster slowly stewed. Serious work in the kitchen and a meticulous service. Contemporary setting. Prix-fixe menus €28, €33 and €49. Gastronomic menu €85.
