Serving dishes like red chile macaroni and cheese topped with herbed bread crumbs, Max's offers serious comfort food with a gourmet twist. Open later than most Santa Fe restaurants and near several downtown bars, this is a good place to hit before calling it a night. Max's also hosts fun events, such as live DJs, on Friday or Saturday nights (call ahead to find out what's happening). The Niman Ranch beef carpaccio with baby greens, fresh lemon preserve and a red chile goat cheese brûlée is a highlight of the menu and a nice, well-executed surprise. Max's resides in Santa Fe's burgeoning Railyard district, a trendy area that's the perfect foil for the hip, edgy atmosphere of the eatery, where you can leaf through the racks of magazines while you wait for your meal.
